Trail Mix Cookies

It's true -- I can't live without cookies. That doesn't mean I can't make them a tad more nutritious, though. These chunky trail mix cookies have no white sugar or white flour. No eggs or full-fat butter. And yet, they taste incredible. They are full of omega-3 with walnuts and flax seeds. The secret is in the coconut and vanilla.

Just look at all that wholesome & vegan goodness!



What you'll need . . .

  • 1/2 cup Earth Balance (or other butter substitute)
  • 1/4 cup raw sugar (I used Sugar in the Raw)
  • 1/4 cup dark brown sugar
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon pure vanilla extract
  • 2/3 cup wheat pastry flour
  • 1/3 cup unsweetened coconut flakes
  • pinch salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 cup instant oats (it's all I had -- and it's important to use just this and not rolled oats)
  • 1/2 cup vegan semi-sweet chocolate chips (Sunspire is my fav.)
  • 1/2 cup dried cranberries
  • 1/2 cup crushed walnuts
  • 1 tablespoon flax seeds


Method . . .
  1. Preheat your oven to 350 degrees F.
  2. In the bowl of an electric mixer, cream together the Earth Balance, sugar, and brown sugar.
  3. Add applesauce and vanilla and beat well.
  4. In another bowl, whisk together the flour, coconut flakes, salt, baking soda, and baking powder. Add dry ingredients to the butter mixture and blend well.
  5. Mix in the oats. Then fold in the remaining ingredients (the trail mix part). The dough will be stiff.
  6. Drop heaping tablespoon amounts of dough onto ungreased cookie sheets. Bake for 10 to 12 minutes -- until golden brown.
  7. Yields 2 dozen cookies.
