Day in the Life of My Stomach: Chocolate for Breakfast

What did I eat yesterday? You won't see most of it, unfortunately. I got incredibly lazy with photography. Sorry about that. But, as you've likely noticed, I eat similar foods from day to day. So, for breakfast, I ate this amazing chocolate-topped English muffin with bananas. For lunch, I had Greek Festival food (a special event in the area) -- a hearty helping of spanakopita (spinach pie) and honey puffs (basically donut holes with honey and cinnamon). A high calorie middle-of-the-day meal, but the festival comes but once a year! For dinner, I had a smaller version of Wednesday's swiss-spinach-tomato sandwich on rosemary salt bread. For dessert I ate some dark chocolate almond spread. I also had a very watered down version of our new favorite -- Red Zinger lemonade.
Instead of focusing so much on EVERYTHING I ate, I thought I'd, instead, focus on my favorite eat of the day. Breakfast. I think I'm loving breakfast so much because Ashley over at Edible Perspective keeps tempting me with all kinds of delicious recipes. It inspires me to get creative -- even before my brain is fully functioning in the morning. Thanks, Ashley!
What you'll need . . .
- 1 English muffin (whole wheat)
- 1 medium to large banana
- 1 tablespoon almond butter
- 1 tablespoon cocoa powder
Method . . .
- Toast your English muffin.
- Take 1/2 of the banana and mash or food process it together with the almond butter and cocoa powder. Spread atop the muffin.
- Slice the rest of the banana and place atop the chocolate-y mixture.
