Blueberry Birthday Smoothie

After my insanely indulgent peanut butter-M&Ms pancake breakfast, I needed to get some fruit in my system.
FAST.
BLUEBERRY BIRTHDAY SMOOTHIE
What you'll need . . .
- 1/3 cup unsweetened applesauce
- 1 medium banana
- 1 cup frozen blueberries
- 3/4 to 1 cup ice
- 1 tablespoon sweetener
- 1 handful almonds
Just throw everything into a blender and blend! Make sure you let it go for a while -- the almonds can be tricky. Alternatively, you could probably soak them for an hour or so in water before adding them to the mix.
I had an interesting sweetener on hand -- fig jam with cocoa.
It's SUPER sweet on its own. But it isn't essential to a successful smoothie experience. I think honey or maple syrup would work great, too. Maybe toss a bit of cocoa powder in there for extra flair.
I don't typically use blueberries in my smoothies because we don't keep them around the house -- so the flavor is a nice treat. But I will say that -- personally -- I enjoy smoothies with a bit of almond milk or other dairy-ish product best. Stephen made a variation of this smoothie, but he added Greek yogurt versus applesauce.
Still, on a hot day, it's great to get fruit in as quickly as possible. Oh, by the way -- this recipe makes WAY more than what's pictured in the fancy glass.
