Thanks + Halloween

Thank you so much for all your notes of love and support after our pregnancy announcement. As I wrote, I was conflicted about sharing so soon, but when you’ve experienced multiple miscarriages . . . I feel like the taboo about sharing early just changes. At least for me. At this point, we truly need the support either way. My nerves are also on high alert, so it’s hard to keep something like this to myself.

I won’t be launching into full-fledged weekly updates for quite some time. I may not even do them this time around. It’s too early to commit to anything, really. A few of my friends were asking me if I feel more relaxed since our ultrasound went so well. Honestly? The answer is a solid yes/no. It’s a great sign that we’re at least on schedule, but I’m only 6 weeks and 1 day today. I have eons to go, and anything can happen in the first trimester and well beyond.

I’ve learned with pregnancy and TTC to expect the unexpected. To take nothing for granted. To be guarded. With Ada, it was all fun and games. I feel entirely different now, and I wish I could have some of that blissful ignorance back.

In the meantime, we’ll treat each appointment and week like a major milestone. I just started getting some nausea today. I take that as a good sign (though I’ve experienced first hand that sickness doesn’t always mean a healthy pregnancy). I’ve also been quite tired. The time change was especially hard for this reason. Otherwise, I’m counting down the days until my midwife appointment on November 23. I’ll be 9 weeks, and it feels worlds away. My fertility doctor did mention he might be able to get me in for another ultrasound between now + then. I don’t want to be overkill, but I do think the peace of mind would be worth it.

Anyway, today I thought I’d share a couple Halloween photos. We walked down the street to a church trunk-or-treat this year. Ada’s favorite part was the s’mores fire pit. (Mine too!) She was originally a lion, but she ended up being a panda because it was chilly. The panda hoodie was something I was saving for next year, so don’t be surprised if you see it again,


Yes. Those are purple Hunters on a scarecrow. Don’t leave your rain boots out in the hot summer sun. They’ll be cracked and ruined in no time at all. At least I found another way to use them before they go in the trash. Also: Stephen was Scottie Pippen. I don’t even know what my costume was supposed to be. I found the mask for like $2 at RiteAid a half hour before we walked around the neighborhood.

After we visited some houses, we returned home and my in-laws handed out candy with Ada. We had well over 100 kids come in a matter of a couple hours. She was giving two fistfuls to anyone who asked. Then she said “come back tomorrow!!!” Yeah. I think Halloween was a success.

Halloween + Spiced Crock Pot Applesauce

I absolutely love this time of year. Cool, crisp weather. Apples in abundance. Crunchy leaves beneath my feet. I can’t believe Halloween is just around the corner. And I’m one of the one in three people who started their Halloween shopping early this year. Yup! We bought Ada’s costume in August, and you’ll never guess what she chose. (I can’t wait to share the photos!)

I’m writing this post today in partnership with Aquafresh® and BlogHer. Did you know that Halloween is the third most popular holiday in America next to Thanksgiving and Christmas? I suppose it’s not a total shock. Pretty soon, we’ll be bringing home a bunch of chocolate bars, gummies, lollypops, and -- yes -- candy corn from our spooky walk around the neighborhood. (Oh, I have a soft spot for candy corn!)

We don’t have strict rules revolving around candy and Halloween. It’s (mostly) just one day of the year, after all. At the same time, we try to keep most of our autumn treats healthy. Every year, for example, we make homemade applesauce in the slow cooker. It’s a treat as much as all the candy is. Most recipes I’ve come across throughout the years call for a hefty dose of sugar. We don’t substitute anything special in its place. Instead, we leave the sugar out.

You know what? It still ends up tasting absolutely amazing with all its natural goodness. This recipe is a great one to make with small children. I suggest chopping the apples ahead of time and letting little hands put them into the pot. Then stir on the spice, start the cooker, and let the delicious aroma fill your kitchen.

It only takes a couple hours to turn this:

SPICED CROCK-POT APPLESAUCE


What you’ll need . . . 
  • Fresh apples. Total number depends on size. Enough to fill up crock pot.
  • Ground cinnamon
  • Lemon juice
  • Slow cooker

Method . . . 
  1. I never peel the skins off my apples. Simply wash and chop into wedges.
  2. (I’m not too picky with the variety of apples I use. I made this batch with local Paula Reds.)
  3. Fill up your crock pot with the apples. Then add a tablespoon or two of cinnamon.
  4. Pour in a tablespoon or two of lemon juice, too.
  5. Cook for two to three hours on high, stirring occasionally.
  6. Then mash with a potato masher. Alternatively, you can wait for the applesauce to cool and process until smooth in your food processor.
  7. Eat up within three to five days. Or store in glass jars in the freezer. If you haven’t used glass to freeze before, check out this post with instructions and more information.

To give your homemade applesauce a festive Halloween twist, you can even add a bit of canned pumpkin to the mix. The pumpkin gives it an orange color, thicker texture, and naturally sweet flavor. Plus, it’s a great way to sneak in some additional nutrition. It’s also a great side dish to bring to a party or fall potluck meal.

Grilled Cheese (Knot!)

Alternative to grilled cheese? Take Pumpkin Garlic Knots, bake them so they are slightly under-done in the middle. Then slice in half, top with cheese of your choice, I used cheddar, and broil for a few minutes until browned and bubbly. Then top with the usual garlic knot mixture.

This "recipe" is simple enough.


Goes great with Roasted Tomato Soup!

Moonshine Kingdom

Nothing much to report from this morning. I'm finishing up some storm preparations, as I just wrote on Writing Chapter Three. This weekend went well eating-wise. Though, I did find myself in possession of a couple frosted sugar cookies from Wegmans. (Note the passive voice.)

In an appropriate Halloween theme, of course.


This weekend marked the Zombie Run, but due to the storm, I think most people were out scrambling around to get water and supplies. (Not-so funny story: All the stores are out of water.) Only a few of us showed up compared to a couple years ago. So, we went out for coffee brains instead.

At least I got a few photos. I don't think Ada knew what to think when mommy had all that strange makeup on. I'm still washing it off my forehead, too.


Weekend highlight: I made the most delicious batch of Pumpkin Garlic Knots (and replaced the agave with maple syrup -- you may also use honey). We ate them Friday night and we f.i.n.a.l.l.y watched Moonrise Kingdom. Delete. I did it AGAIN! I keep accidentally calling it MoonSHINE Kingdom.

That would be another kind of movie entirely, wouldn't it?


Of all the recipes on this blog, the pumpkin garlic knots are -- by FAR -- my favorite. Also one of the easiest. And I make them year-round, even when the pumpkin supply is relegated to the bottom shelf in the most obscure corner of the grocery store.

Which has me thinking: Right now we mostly have winter squashes waiting to be roasted, dough waiting to be baked into bread, and eggs that need to be fried before consuming. We have some packets of baby food for Ada and some raw fruits and veggies for us, but very little else that can just be eaten as-is.

When the weather gets rough, do you have a stash of emergency foods? I need to add this to my last-minute list. Oh, and I need to get this load of funky diapers into the wash ASAP, too. I wouldn't want to be stuck with them any longer than necessary.

Weekend Happenings: Halloween Edition

Weekend recaps are fun. But a few of you wrote in the survey that we tend to be a bit wordy. (Guilty -- after all, I majored in writing.) So, our new and improved weekend recap format is in photos and brief descriptions. Maybe a list or two. The foods featured are previews -- "things-to-come" -- because everything you see will be explained in greater detail later in the week.

The other stuff is just what we've been up to. Plain and simple!

(Don't worry! Not all posts are going to an abridged format, of course. But variety isn't a bad thing -- we're embracing a bit less writing for the weekend recap, too!)

Thanks to Chris and Dani for taking these photos. Crazy running club people (and friends) take it to the streets. In search of brains. 3.5 chilly miles in all. Way, way, way more fun than running 20 alone!

FITNESS

The knee still hurts. Joined YMCA. Taking a week completely off from running. Will incorporate (and report on) the following activities in next seven days (or so) . . .
  • Aqua Jogging. (Specifically THIS plan)
  • Cycling.
  • Walking.
  • Strength Training.
  • Yoga.
  • Rest.
  • Nutrition/Diet Related to Injury/Decreased Training.
